Mild Armenian string cheese is tightly wound in a braid and studded with tiny black seeds called nigella. It is made from cow's milk mozzarella curds that are heated and seasoned with the Middle Eastern spice mahleb. Most people unwind the coil and eat the cheese as strands but it can also be enjoyed warm. When warm, serve with olive oil and pita bread.
