Carved from 500 pound mammoth cheddar wheels aged for 3 years, this cheese is made from sweet, whole cow’s milk. It is semi-hard and yellow to orange in color with a sharp flavor that lingers with the sweetness of the milk. This cheese is considered the Big Cheese of American cheeses. Pairs this aged Cheddar with Merlot, Cabernet Sauvignon, Zinfandel, and Bordeaux.
