Fromager D'Affinois is a delicious soft-ripened, double-cream cheese from France, somewhat similar to Brie in appearance and taste, but perhaps a bit milder. This cheese is made from cow's milk by Fromagerie Guilloteau in the Rhone-Alpes region using a modern method called ultra filtration which removes water from the pasteurized milk, concentrating all cream components. One effect of this process is that it allows the acceleration of the cheese making process. Whereas classic Brie takes eight weeks to make, Fromager D'Affinois can be made in two weeks. Ultra filtration also results in a milk that retains more nutrients and proteins, giving the cheese a relatively high fat content of 60%. The paste of D'Affinois is softer and more seductive than that of Brie and the flavor more subdued. Beyond the salt, there's a hint of mushroom and the cheese is just plain rich and delectable. The rind is edible, but not required to eat.
