Kefalotyri is a very firm cow's milk cheese. It has tight and sporadic irregular holes that are distributed equally throughout the paste. Its texture is uniform and easy to slice while it's yellowish in color. The taste is milky, slightly acidulous and salty. Kefalotyri is consumed as is, fried in olive oil or grated.

White Cheddar is a semi-hard cheese that is made from pasteurized whole cow's milk. The word cheddar actually comes from the process in the manufacturing of this product. Thsi cheese is cured for 30 to 60 days and in some instances for 1 year and over. Great on sandwiches, Mexican dishes and even on pizza. Pairs well with Merlot, Zinfandel, or Cabernet Sauvignon.
