Details

Made from sheep's milk, this 40 lb wheel is created in Sardegna, Italy. It is almost white in color, very hard in texture, and has a natural, thin rind. Because of its aging process, it has a very high salt content. This cheese has a strong taste with a peppery sheep’s milk flavor. This is the favorite grating cheese for pasta according to all Southern Italian chefs. Full bodied red sauces and red wines are suggested.

Thsi cheese is cured for 30 to 60 days and in some instances for 1 year and over. Great on sandwiches, Mexican dishes and even on pizza. Pairs well with Merlot, Zinfandel, or Cabernet Sauvignon.
