Pecorino Romano is one of the world's oldest cheeses, dating back to Roman times when it was made for the Caesars. It actually goes back to Romulus and Remus, the founders of Rome. Locatelli Pecorino Romano was first produced by the Locatelli family over 500 years ago. Unique in quality and uniformity, Locatelli is made from the finest grade sheep's milk and aged at least nine months to develop its unique flavor and texture. This Pecorino has a spicy taste and salty flavor. Its texture is semi-firm and crumbly, without being too dry, and it's best eaten when young.

Muenster is an American cheese derived from an English translation of Munster, a city in Germany. Muenster cheese is a smooth textured cheese with a white interior and orange rind, derived from vegetable coloring. This washed-rind cheese is made from cows' milk. It usually has a very mild flavor and in some cases, when properly aged, it can develop a strong flavor with a pungent aroma. This cheese is commonly served as an appetizer and because it melts well, it is also often used in dishes such as grilled cheese sandwiches, tuna melts, and cheeseburgers. Serve with a glass of Riesling, Dolcetto or Barbera.
