Made from sheep's milk, this 40 lb wheel is created in Sardegna, Italy. It is almost white in color, very hard in texture, and has a natural, thin rind. Because of its aging process, it has a very high salt content. This cheese has a strong taste with a peppery sheep’s milk flavor. This is the favorite grating cheese for pasta according to all Southern Italian chefs. Full bodied red sauces and red wines are suggested.

Muenster is an American cheese derived from an English translation of Munster, a city in Germany. Muenster cheese is a smooth textured cheese with a white interior and orange rind, derived from vegetable coloring. This washed-rind cheese is made from cows' milk. It usually has a very mild flavor and in some cases, when properly aged, it can develop a strong flavor with a pungent aroma. This cheese is commonly served as an appetizer and because it melts well, it is also often used in dishes such as grilled cheese sandwiches, tuna melts, and cheeseburgers. Serve with a glass of Riesling, Dolcetto or Barbera.
