Produced from free range goat's milk with season-based feeding according to the characteristics Sardinian fodder pastures and scrub. This semi-cooked cheese is white or straw-yellow when mature; sweet and strechy; granular if mature. It is tasty, sweet and acidulous, pleasantly spicy when mature.
