From the Swiss-Austrian border comes Appenzeller, a unique cheese with rich history and intense flavor. Made for over 700 years using traditional methods and a time-tested recipe, Appenzeller is tangy, dense and slightly spicy in flavor. Produced with fresh, raw cow’s milk, the cheese is created in villages surrounding the canton of Appenzell, from cows that feast on fresh, wild grasses. Washed in an herb-infused brine, the cheese is aged for three months, allowing the flavors to develop and tiny eyes to form.
