This tubular or ball shaped type of provolone is made from cows milk and is more a fresh cheese. It's comparable to mozzarella but aged for a longer period of time which gives it a little more flavor. It is used for sandwiches or as simply a table cheese. Enjoy with a glass of Chenin Blanc, Riesling, or Dolcetto.
